The 3.5-inch blade features a taper-ground edge with a 15° blade angle for added stability, easy honing, long-lasting sharpness, and increased cutting efficiency. A shortened bolster exposes the full blade edge, making sharpening easier and allowing full use of the blade throughout its service life. To maximize performance, Mercer Culinary recommends hand washing with warm water and mild soap, followed by immediate drying with a soft towel.
